A new story (text and images) for El País featuring David Fernández, a miller who has brought back to life a 18th-century mill with the help of his mentor, Luis. He mills organic cereals, corn grown by himself, as well as rye, wheat and spelt. Read full story here.

Very happy to have joined the team of contributors at El País Gastro, the new section of Spain’s leading newspaper El País.
My first story (writing and photography) is about a woman I deeply admire, Marigel Álvarez, a self-made entrepreneur who saved one of Asturias’s most legendary cheeses from disappearing and who also runs a charming rural hotel in one of Asturias’ most beautiful rural settings: Redes Natural Park. She is a star chef in the London food scene, having made the tapas culture approachable for Londoners from Barrafina first, and now from her own restaurant, Sabor. Interview and photography with Cédric Grolet, a leading French pastry chef, for Food and Wine Mexico. This interview, conducted in Paris, is included in the art issue and it talks about how his realistic fruit pastries made him The World Best Pastry Chef 2018 by The World’s 50 Best Restaurants.

Interview and photography with one of Spain’s most talented chefs, Quique Dacosta, for Food and Wine magazine. This interview, that took place at the chef’s 3-Michelin star restaurant in Dènia (Spain), focuses on his relationship with the sea and chefs’ role in promoting sustainability.
